Chocolate Chia Pudding

Chocolate; makes any bad day good again.

I know that we are getting closer to Christmas and it’s a season that is filled with chocolate, but I couldn’t resist y’all. I needed to make this chocolate chia pudding for breakfast. I had prepared it since the evening before, stored it in the fridge overnight, and then the morning after (today) I just took it out, garnished and ate it straight away (ok, after a small photo session). It’s so simple to make chia pudding and so nutritious too. This is great to eat as a snack meal in between your main meals, or have for breakfast like I did. You garnish with optional garnishing too, but I will tell you about my favorites…

Chocolate Chia Pudding needs garnishing…

… and my favorite garnishing needs to be fresh banana. It suits really, really well with the chocolate but unfortunately I didn’t have any left so I needed to be creative and chose banan chips instead. Then I also added my Chunky Monkey Granola because if chocolate and banana suits, you should try out the combination of chocolate + banana + coconut. Really good! But if I’m going to be totally honest, the ultimate and my favorite topping to this chocolate chia pudding is still banana, peanut butter and possibly some coconut flakes. That is the garnishing I’d recommend first!

Yummy ingredients you can top your chia pudding with:

  • Fresh berries like strawberries or blueberries

  • Banana

  • Peanut butter or other nut butter

  • Raw Cacao Nibs

  • Coconut flakes or grated coconut

  • Banana Chips


THIS RECIPE IS:

  • Vegan

  • Sugar Free

  • Can easily be made gluten free

  • Nut Free

  • Simple to make

  • Only consists of a few ingredients

  • Suitable for both breakfast and snack


Chocolate Chia Pudding

INGREDIENTS:

3 tbsp chia seeds

0.5 dl (20 g) optional oats

2 dl plats based milk

1 tsp cacao

a pinch of real vanilla powder

1 tsp agave syrup or maple

HOW TO MAKE:

  • Combine all ingredients in a bowl or a glass. Place in the fridge for approx 1 hour or preferably overnight.

  • Serve the other day with optional garnishing, but my personal favorite is with peanut butter and fresh banana (see middle part of this post).
