I go Bananas over You!

There aren’t many things I love as much as the smell of a freshly baked batch of homemade granola. This time I made a granola that is sooo crispy and which has nice chunks - just the way I like it the most. I call it my “Chunky Monkey Granola” due of it having various ingredients liked by monkeys, like… bananas (shocking huh?)! This granola is sweetened with bananas instead of refined white sugar like so many of the bought granolas are unfortunately nowadays. It’s totally ok to eat that kind of granola if you want to, but I personally hate getting a sugar rush as soon as I have eaten my breakfast in the mornings. I prefer to have a granola with more fibers, more satisfaction, more pure and clean ingredients, and a granola sweetened by for instance banana to give me a more balanced energy level. Important to know!

When making this recipe, be sure you use ripped bananas. Ripped bananas are sweeter but also softer. That makes it possible to mix them too. Otherwise, if using not-ripped bananas, the mixture will just get grainy and… ugh. Not what we are aiming! So it’s very important to use ripped bananas, preferably even a bit brown on the outside. It’s nothing wrong with those bananas, they’re perfect for these kinds of recipes!

Also, if you are nut allergic it’s totally ok to just skip the nuts. If you are gluten intolerant you can just use gluten free oats.

Chunky Monkey Coconut Granola

INGREDIENTS:

2 small ripped organic bananas (approx 200 g in total)

2 dl (0.8 cups) water

1/2 dl (0.2 cups) sunflower seed oil


approx 6 dl (2.5 cups) optional oats

1 dl (0.4 cups) linseeds

1 dl (0.4 cups) sesame seeds

1/2 dl (02 cups) natural walnuts o rather nuts, can be excluded

4 tbsp grated coconut

a pinch of salt

2 tsp cinnamon

approx 2 tbsp agave syrup or maple syrup, can be excluded


+ Garnishing: coconut flakes, raw cacao nibs and possibly dried banana slices


HOW TO MAKE:

  • Heat oven to 175 degrees C (345 F).

  • Mix banana, water and oil to a smooth liquid.

  • Add all remaining ingredients in a bowl and combine. Pour over the liquid over your grains and mix again with a spoon.

  • Place a parchment paper on a baking sheet and spread out the granola on the sheet. Mix together.

  • If you want to, you can also ripple over a little bit of agave syrup / maple syrup. It gives the granola a bit more “caramelized” flavor, but it can be excluded.

  • Place the sheet in the oven for approx 20'. After half the time stir it around with a spoon. Keep an eye on the granola though because it can get burned fast depending on the oven.

  • Let the granola chill and then add coconut flakes, raw cacao nibs and dried banan slices to the granola, or other dried fruits if you want too.
