Watermelon, Feta Cheese and Fresh Basil Salad

Happiness is summer, sun and cold watermelon.

The rain is pouring outdoors while I’m eating this bowl of pure deliciousness. The bowl represents and screams “summer in Greece!!!” so much for me but yet I’m home in rainy Sweden and can’t - at least not for now - enjoy this in Greece. Even though this might sound a bit sad, still I have to say that this bowl of pure fresh deliciousness, made me feel a lot better. It’s incredible isn’t it that you only need three simple ingredients to create something s delicious as this? If you haven’t tested this combination yet - go ahead!

Watermelon Salad with Feta Cheese and Fresh Basil

INGREDIENTS:

approx 400 g cold watermelon

approx 40 g original or vegan feta cheese

Fresh basil or spearmint



HOW TO MAKE:

  • Cut the watermelon into approx 2 cm pieces and cubes.

  • Crumble over feta cheese and spread over finely chopped herbs.

  • Done!
