Happy new month! May is here and it’s time for summer, sun and summery desserts! I love May month, and this year I have loads of fun things going on this month. Something else I’ll enjoy very much this month is all the summer desserts! One of my absolute favorite is apple pie with vanilla sauce (custard sauce). Today I want to show you a version which is beautifully decorated with hearts, and which has endless of possibilities of variations!

Yes, this pie has endless of variations possibilities!

This pie can be made in endless of different wats. I have personally chosen to make It sugar free and vegan, but I totally get if everyone doesn’t have the possibility or the wishes of making their dessert this. In the recipe further down this post, you’ll get my version of how I made this desserts but in this area I’ll give you the substitute you can use if you don’t tolerate or don’t like a certain ingredient.

Sweetening - I have used coconut sugar and stevia in this apple pie but you can otherwise pick white sugar, brown sugar or sukrin.

Cooking fat - I have used dairy free vegan butter but lactose free butter, ordinary butter or baking margarine also works.

Flour - I recommend to pick wheat flour, but you are for instance gluten intolerant it should be possible to use ordinary plain gluten free flour instead. Nut flour and coconut flour does not work.

Thereafter, the ingredients are standard and it’s just to get started with the baking! I have served the pie with custard sauce but it’s just as nice served with a scoop of vanilla ice cream.

Vegan Apple pie

a big pie pan, approx 25 cm

INGREDIENTS:

250 g dairy free vegan butter

6 dl wheat flour

3 tbsp cold water

approx 6 big apples

approx 4 tbsp coconut sugar

3 tsp cinnamon

2 tsp cardamom

+ vegan milk and coconut sugar

HOW TO MAKE:

  • Heat oven to 180 degrees C.

  • Use your fingers or a fork and combine butter and wheat flour. Add water and combine to a dough.

  • Place the dough in the fridge and let rest for 30'.

  • Meanwhile, peel your apples and slice thinly. Place all apple slices in a bowl and mix with coconut sugar and spices.

  • Thereafter, divide the dough into two; 60/40. Press out the bigger part of the dough in a pie dish, approx 27 cm. Prick the bottom of the pie crust with a fork and place in the oven to pre-bake for 10 minutes.

  • Meanwhile, press out or roll out the smaller dough on floured table. There are lots of different ways you can decorate the pie; with figures, like braids, ziczac or checked. I used a heart shaped cookie cutter and cut hearts. 

  • When you have pre-baked your crust you fill your crust with the apples and thereafter top with the rest of the dough.

  • Brush the top of the pie with some vegan milk and sprinkle some last coconut sugar on top before placing in the oven for approx 50-60'.

  • Preferably serve it thereafter with custard sauce
