Semla Pancake Tacos

Semla (or semlor in plural) - a Swedish dessert consisting of a wheat bun stuffed with almond icing and whip cream. It is a very simple but yet delicious dessert that I personally love. Every year we celebrate "Fettisdagen" or "Semmeldagen" (the Semla day) in Sweden and there aren't many weeks left until the day is here. That is the reason why I today want to show you my own version of semla.

Different kinds of semlor

Every year a new kind of semla seems to be created in Sweden. In Sweden they have made semla-wraps, semla-muffins, semla-cronuts and selma-sticky cake. I made semla-loukoumades a while ago which were delicious (get the recipe here) but today I want to give you my semla pancakes / semla tacos / semla pancake tacos. It's simple but yet so delicious and very festive to eat.

Gluten Free and Vegan

A semla is a traditional recipe and it is usually not vegan, gluten free nor sugar free. I however have made my pancakes all of it. Don't worry, there won't be any lack of deliciousness in these though!

Almond Icing or Almond Paste

We always have almond paste in our semla, and there is no difference in my pancake tacos. Traditionally almond paste consists of egg white but there are vegan options in store too. If you want to have it both vegan and sugar free I recommend you to make one by yourself mixing almond flour, vegan whip cream and stevia together. It works fine!

…If you don’t want to use my pancake recipe below you can use an optional that is suiting to make mini pancakes (#plättar). Fill them the way I do with whipped cream and almond paste and you have a semla pancake tacos too. Don’t forget to tag me on instagram when you make a recreation of my recipes or get inspiration. Semla Pancake Tacos

INGREDIENTS:

90 g plain flour, buckwheat flour or gf basic flour

1 tbsp corn starch

1,5 tsp baking powder

1 tbsp agave syrup or maple syrup

a pinch of real vanilla

1/2 tsp cardamom

120 ml (1,2 dl) vegan milk

Optional cooking fat for frying


Vegan whip cream + almond icing


HOW TO MAKE:

  • Mix together all of the dry ingredients in a bowl. Add the remaining of the wet ingredients and mix thoroughly until a lump free batter is made.

  • Heat up a frying pan with cooking fat and fry your pancakes. As soon as bubbles have been created on top you can flip the pancakes carefully and fry them for approx 20 s on the other side.

  • If you have a taco holder, place the pancakes in one of the holders. 

  • Mash the almond icing with a fork, in a bowl together with some whipped cream (unwipped) so that the almond icing isn't so dry. Insert the paste into a piping bag and pipe out a line of almond paste onto the pancakes.

  • Whip the whip cream and do the same with the cream on top of the icing sugar. If you want to you can also end by garnishing with a little bit of cardamom or icing sugar.
