Puff Pastry Pie with Ricotta, Tomato and Garlic

How to make the most simple, delicious pie ever?

The supermarket I always go to had a huge sellout on puff pastry the other day I was there and I decided to buy a few packages of puff pastry and see what I can make out of these. Puff pastry is, as you probably already know, great for both sweet and savory recipes. And buying, pre-prepared puff pastries makes your recipe so much easier to make. I usually cook or bake sweet puff pastry recipes so decided instead to go for a savory one today. I ended up making a delicious puff pastry pie with ricotta, tomato, garlic and so much more!

What are the flavors?

The flavors are simple, fantastic, luxurious and in this recipe I combine rather classical flavors too. I combine ricotta cheese, tomato, red onion, garlic and fresh basil. When eating this it will feel like you are in Southern Europe. Recommended to serve this as a lunch, brunch or even as a festive snack when having guests over or when drinking wine.

Puff Pastry Pie with Ricotta, Tomato and Garlic

INGREDIENTS:

250 g puff pastry, rectangular

150 g ricotta cheese

500 g tomatoes, a combination of various kinds (colors and sizes) is wonderful too

1 big red onion

2 handfulls of fresh basil

4 big garlic cloves

2 tbsp olive oil

Sea salt and black pepper

HOW TO MAKE:

  • Heat oven to 225 degrees C (437 F).

  • Place the puff pastry on a lined baking sheet and fold the edges upwards a little bit.

  • Spread on a layer of ricotta over the whole puff pastry.

  • Slice the tomatoes and the red onion, and place them in a bowl. Chop the basil, press the garlic over the tomatoes, and drizzle over the olive oil, salt and pepper. Combine everything together thoroughly. Spread out this mixture evenly onto the ricotta cheese.

  • Bake in the middle of the oven for approx 18’ or until golden brown.
