Overnight Blueberry Oat Parfait

Blueberry and Blackberry Season is ON!

Yes, we in Sweden have the huge honor or being able to pick these fantastic berries straight from the forest or our own garden. I love it, and that’s the reans I want to take advantage of this. I went out into our garden and started picking lots of blackberries straight from our blackberry bushes, and complete the breakfast I had started to prepare since the evening before.

This is a combination of everything yummy. In this parfait, in layers, we have blueberry overnight oats, berry smoothie, coconut yoghurt, nice cream, raw blueberry juice, fresh berries and just a few slices of banana. YUM!

Blueberry Overnight Oat Parfait with Smoothie

INGREDIENTS FOR SMOOTHIE

1 frozen or fresh banana

1,5 dl blueberries and blackberries

1 dl vegan yoghurt

1 tbsp vegan protein powder with vanilla flavor


Berries, yoghurt (can be excluded), banana and raw blueberry juice

INGREDIENTS FOR OVERNIGHT OATS

1 dl fibre or gluten free oats

1 tbsp chia seeds

1,5 dl plant based milk

1-2 tbsp vegan protein powder with vanilla taste

1 dl frozen blueberries

INGREDIENTS FOR NICE CREAM

2 frozen bananas + a little bit of plant based milk + a pinch of vanilla powder


HOW TO MAKE IT

  • Combine grains, seeds, protein powder and the blueberry with the milk in a glass or a bowl. Cover with plastic foil and place in the fridge over night.

  • In the morning, before serving, mix the ingredients for the nice cream thoroughly until lump free and creamy. Place the nice cream on the side.

  • In the same mixer you can thereafter mix the ingredients for the smoothie until completely creamy. Taste!

  • Serve your overnight oars and smoothie in layers in combination with the remaining ingredients in a glass or a glass jar. Garnish with your nice cream and fruit and berries.
