Fluffy Pancake Stack with Passion Fruit

Pancake Stack on a Sunday morning? Yes please!

Another Sunday, another pancake stack. Why complicate your thoughts, trying to decide what to make? Pancakes for a Sunday is always a success! Today I'm making a new favorite recipe of fluffy pancakes, served them in a pancake stack, with (for instance) passion fruit. I love it!

THIS RECIPE IS:

  • Vegan

  • Fluffy

  • Delicious

  • Sugar Free

  • Sweet but without any refined sugar

  • Suits very well with optional kind of garnishing

  • Great weekend breakfast

Fluffy Pancake Stack with Passion Fruit

INGREDIENTS:

1 ripped banana (approx 120 g)

3/4 dl (30 g) gf, fiber or ordinary rolled oats

2 tbsp plain wheat flour, buckwheat flour or gluten free flour

2 dl (200 ml) plant based milk

1 tsp baking powder

a pinch of salt

HOW TO MAKE:

  • Mix everything together in a blender or using a stick blender.

  • Heat a frying pan with optional cooking fat and fry your pancakes.

  • Keep frying the pancakes until all of the batter is done.

  • Serve with for instance passion fruit, agave syrup, organic banana, raw cacao nibs and coconut flakes.
