Fig Squares with Chocolate Ganache and Sea Salt

I think you probably have understood now, by the look at all of my latest posts, that I truly love chocolate. Chocolate is something you eat no matter time of the year it is, and I cannot stop eating it during Christmas let me tell you that. Today though, I actually want to give you a more “raw food”-kinda-looking dessert (but which is no bake), that yo can eat no matter celebration or time of the year it is. This recipe is very simple to make, you let the fridge do the work and we use the sweetness - mostly - from dried figs. These are my fig and chocolate ganache squares y’all, and I love to top it with a bit of sea salt. You better try this out!

The flavor is a success

It’s not often I use dried figs in my recipes, but this recipe truly made me realize that I really need to add that more into my recipes! These bites gets an exiting, a little bit sweet-sour, taste from the dried figs that suits fantastic with the chocolate and a little bit of sea salt. It’s a success for real.


A recommendation if…

… you don’t want to use chocolate ganache, then you can use “ordinary” melted chocolate instead. Obviously I recommend you to pick chocolate ganache, since it’s richer and thicker and simple… ganache, but if you for some reason can’t/don’t want it, you can just melt chocolate and top the fig mixture with the melted chocolate.


THIS RECIPE IS:

  • Vegan

  • Without any refined white sugar

  • Can be made gluten free if picking gluten free flour

  • Can be made nut free if picking for instance coconut flour instead

  • Delicious

  • Small delicious bites perfect to have stored in your freezer to have when the sweet tooth kicks in

Fig and Chocolate Ganache with Sea Salt

a small batch

INGREDIENTS:
6 medium sized dried figs

1 dl (100 ml) boiling hot water

1 dl (40 g) oats

1 dl almond or hazelnut flour

a pinch of real vanilla

15 g agave syrup

1/2 dl (50 ml) vegan whip cream

60 g dark chocolate

Sea salt

HOW TO MAKE:

  • Boil your water. Place your figs in a blender or in a bowl and pour the boiling hot water on top. Let it stand for 10' so that the dired figs soften a little bit.

  • Blend the figs in a blender or with a stick blender to a thick caramel-like-sauce.

  • Mix this caramel with oats, nut flour, vanilla and syrup to a sticky "dough". Press out this dough on a baking sheet in a rather small pan (approx 10x10cm). Place in the freezer while making your chocolate ganache.

  • Heat up the cream in a small sauce pan on medium heat. Add bites of chocolate and stir around with a spoon until the chocolate is melted and it's a thick chocolate sauce.

  • Take out the "cake" from the freezer and spread your chocolate ganache on top. Finish by spreading over some sea salt. Let it set in the freezer.
