Tomato Bulgur Pilaf Salad

Bulgur is my favorite carb side dish. It’s fiber rich, protein rich and makes you feel satisfaction and fullness. Bulgur also has lots of variation possibilities and today I’d like to show one version of bulgur that I often make when I’m home and want to make my bulgur a bit more flavorful. Bulgur it self might have some flavor, but when trying out this tomato bulgur pilaf salad you’ll really get the difference. This one is flavored with tomato, onion, garlic, peppers of various kinds and herbs. I really love this one and usually make a big batch and have it stored in the fridge for the week. in other words, this is also a great carb source for your meal prep.

Tomato Bulgur Pilaf Salad

INGREDIENTS:

2 dl (170 g) bulgur

0.5 red onion

1 garlic clove

1 tbsp olive oil

1 tbsp tomato paste

1 ripe tomato

1 green pepper

0.5 red bell pepper

Salt and black pepper

Fresh parsley

+ possibly some chili flakes

HOW TO MAKE:

  • Boil bulgur according to the instructions on the package.

  • Meanwhile, finely chop red onion and garlic. Heat a frying pan with olive oil and fry these soft.

  • Add tomato paste and the chopped ripe tomato. Combine and cook for 30s. If needed add a little bit of water to the pan.

  • Add chopped green pepper and red bell pepper in smaller pieces. Cook.

  • When the bulgur is done add it to the pan and combine all together. If you like it a bit more spicy you can also add some chili flakes after taste.

  • Finish with finely chopped fresh parsley, salt and a little bit of black pepper after taste.
