Apple and Pomegranate Feta Cheese Salad with Balsamic Vinaigrette

If you are tired of the tomato-based salads I’m here to give you a salad that is different, made with fruits but so incredibly delicious! This has become one of my favorite salads and we make it very often in my home. The combination is just fantastic and it is a great harmony and balance between sweet-sour-salty flavors. I love this, and I really recommend you to try this if you have been looking for a fresh, delicious salad of a new kind.

Apple and Pomegranate Feta Cheese Salad with Balsamic Vinaigrette

INGREDIENTS:

2 handfulls of various green leaves (baby spinach, arugula etc)

0.5-1 green sour apple

4 tbsp pomegranate seeds

1 tbsp oliv eoil

1.5 tbsp balsamic vinegar

1.5 tsp agave syrup, maple syrup or honey

approx 50-100 g optional feta cheese (vegan works too)

HOW TO MAKE:

  • Add the green leaves into a bowl or on a plate.

  • Slice the green apple, and combine the olive oil, balsamic vinegar and agave syrup in a small bowl to dressing.

  • Garnish the greens with the apple slices, pomegranate seeds, (vegan) feta cheese and finish with the dressing.
